Peanut Butter Surprise Cookies

I was surfing the web the other day when I stumbled upon Noble Pig. The particular post that I found was for “Million Dollar Cookies.” Apparently, these cookies won last year’s Pillsbury’s Bake-Off competition. Seeking to redeem myself from my last cookie disaster, I decided to give baking another shot. As always, I did tweak the recipe just a tad…it’s what I do, okay?

The cookies turned out crispy on the outside, and full of gooey deliciousness on the inside. I’m actually pretty surprised with how good they tasted; I honestly expected to ruin them completely. I call it a win.

You will need:

  • ½ cup powdered sugar
  • ¼ cup cocoa powder
  • ¾ cup creamy peanut butter
  • 2 tubes of Pillsbury peanut butter cookie dough
  • cooking spray

Yes, that’s really it! I know my recipes tend to be a bit ingredient-intense, but not this one.

Start by preheating your oven to 375 degrees. Also, make sure that you don’t take your cookie dough out of the fridge until you’re ready to use it…it needs to be cold to work.

Mix the powdered sugar and the cocoa powder together in a large bowl with a fork. Then add the peanut butter and mix again with the fork. I eventually had to use my bare hands to mix it fully, which honestly is more fun than it sounds.

After the peanut butter mixture is ready, take out the refrigerated cookie dough. Slice each roll into two dozen pieces. Pat one slice of cookie dough flat in your hand, place a small ball of the chocolate peanut butter on top, and put another slice of cookie dough on top. Carefully pat the sandwich in your hands until the edges are sealed and no chocolate mix is visible. The unbaked cookie should be about a quarter of an inch thick…if you squish them flatter (like I did), the cookies will be crispier on the outside.

Place the cookies about an inch apart on a greased cookie sheet, and bake for 10 to 14 minutes. Let cool completely before you dive in!
